ahhhhhhhh brekfast

Mexican Scrambled Eggs
This recipe for scrambled eggs is made unique with the addition of tortillas, tomato, onion, and green chile.
3 tablespoons vegetable oil
4 corn tortillas, cut in thin strips
2 tablespoons butter
1/2 cup chopped tomato
1/4 cup finely chopped onion
1 small green chile, seeded and chopped
4 eggs, beaten until frothy
salt, to taste
Heat 3 tablespoons of vegetable oil and sauté the tortilla strips. Drain on paper towels or brown paper.
Heat butter in skillet; sauté the chopped tomato, onion and green chile for about 1 minute. Put tortilla strips back into the skillet.
Pour beaten eggs into the skillet over other ingredients and cook, stirring often, until mixture sets. Sprinkle with salt, to taste.Serves 4.


Hello 2006

It's 11.36 am and I'm still in my dressing gown (not a pretty site) the kids are slowly emerging after the party last night and Lu is already breaking the rules by tidying the kitchen despite our agreement with the TV crew that the kids will do the tidying.... Nathan (13) has been in charge of our weekly budget for a week following on from his brothers Aaron (11) and Jacob (8) his reign of crazy wild party time ends tomorrow and we may return to some stability with Danny(15) but who knows for sure... We still need to decide whether we stop giving the kids control after the experiment is up or whether or not we continue after the crew has left I dunno ... anyway decided to have a go at this blogging lark and will be putting some "stuff" up here as soon as I can work out this attachment do..daa ... happy new year... andy
